Oil roti, otherwise known as Clap roti or Paratha roti is a flatbread which is eaten with any vegetable or curry dish that is made in Guyanese households. This flatbread is soft and fluffy and is something different than rice. This is my grandmother's recipe for some of the softest oil roti you have ever eaten. Many people have their own methods of making oil roti, but this is the way I have learned from my grandmother, as she did with her parents, and so forth. Ingredients: 4 cups of all purpose flour 1 1/2 teaspoons of baking powder 1 tablespoon of vegetable oil 1 1/2- 2 cups of water for mixing the dough Extra oil and flour to roll and cook the roti (about 1 cup of each)
