Semolina Cake Recipe | aka Rava Cake or Suji Cake
This cake goes by multiple names: semolina cake, rava cake or suji cake. While the names are different, the cake is the same. This is a very easy cake to make. Made with basic pantry staples, it’s a perfect accompaniment with your evening tea. It can also be made into an eggless semolina cake by replacing the eggs with yogurt. How easy is that? Ingredients
225 g semolina
35 g all-purpose flour
1 1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
190 g castor sugar
40 ml oil
40 ml melted butter
2 eggs (1/4 cup yogurt to make it eggless)
3/4 cup milk
1/2 tsp vanilla essence
1/2 tsp butter essence
Method
Greece a 8 inch cake tin with oil and line with parchment paper set aside.
In a medium bowl sift together flour, baking powder, baking soda and salt whisk well and set aside.
In another bowl add the eggs, milk, oil, melted butter and sugar, vanilla essence and butter essence. Beat well to incorporate all these ingredients.
Add the semolina to the liquid ingredients and mix well cover and set aside for 25 to 35 minutes. after 35 minutes the semolina will have absorbed all the liquid and will swell in size.
preheat your oven to 1 80°C
Add the dry ingredients and gently fold into the wet ingredients bowl.
Transfer to your prepared tin and Bake for 35 to 45 minutes until a toothpick inserted comes out clean. every oven is different so you would need to keep a check on the baking time.
once baked cool the cake on a wire rack in the tin for 10 to 15 minutes then remove from the tin and let it continue to cool on the rack completely, cut into slices and serve.
