Eggplants are usually purple or purple-black in color, but can also be pale green or white, with purple eggplants containing the most vitamins. In terms of shape, eggplants can be long, round, oval, or pear-shaped. The English word "eggplant" hides a secret cultural code: the first eggplants eaten by Europeans were white and oval in shape, and eggplants were considered a fruit at that time. In the Chinese language, “Qie Zi(茄子, eggplant)” is called in different ways depending on the region: Jiangsu and Zhejiang people call it "Luo Su (落蘇/酪酥, cheese)", Guangdong people call it "Ai Gua (矮瓜, dwarf melon)", and southern Min people call it "Hong Cai (红菜, red vegetable)" or “Hong Pi Cai(紅皮菜, red-skinned vegetable)”. It is also known by other names such as “Kunlun Gua (昆侖瓜, Kunlun melon)” or “Cao Bie Jia (草鱉甲, grass turtle shell)”, and etc. Eggplant can be braised, stir-fried, stewed, pan-fried, steamed, tossed in sauce, boiled briefly and then dressed, roasted, marinated, pickled or dried. The roasted eggplant with miso as introduced in Uncle Seoul’s menu today is a time-saving and delicious way to cook eggplant that can be enjoyed by young and old alike. British and American people like to shout "cheese" into the camera when taking pictures. Because when you pronounce the word "cheese", the corners of your lips will naturally turn upward to reveal a happy smile, which will avoid the embarrassment of not being able to smile in photos. The Japanese have adopted this slogan as well by saying “はい、チーズ!(Hi cheese!)”Interestingly, the "cheese" slogan to Korea became "김치 (kimchi)", and in China became "茄子 (eggplant)”. What's even more amazing is that the Chinese word for eggplant, "酪酥 (cheese)", is actually derived from the soft, cheese-like texture of the eggplant flesh.
