Sabudana Khichdi is usually made during fasting days like Navratri or Mahashivratri or Ekadashi. It is an easy snack and is a good recipe to be made during fasting days but it requires some experience to get the perfect non-sticky texture in the sabudana pearls.
The first step is to keep washing the sabudana till the water is cleared and doesn't look milky at all. You might need to wash it 5-6 times.
Ingredients:
Sabudana (Sago/ Tapioca) - 1 cup
Oil - 3 tbsp
Jeera (Cumin Seeds) - 1/2 tsp
Moongfali (Peanuts) - 3 tsp
Hari Mirch (Green Chili), finely chopped - 1
Potatoes, boiled & cubed - 1 cup
Sendha Salt / Himalayan Pink Salt - 1 tsp
Chili Flakes - 1/2 tsp
Black Pepper - 1/2 tsp
Red Chili Powder - 1/4 tsp
Method:
1. After washing the sabudana, soak it in enough water for 5-6 hours. Drain and keep aside.
2. Heat oil in a pan and add jeera. Cook till it splutters.
3. Add peanuts and roast for 2 minutes. Then add green chili and potatoes.
4. Add salt, chili and black pepper. Saute for 2 minutes.
5. Add the sabudana to the pan and mix. Cover the pan and cook for 3-4 minutes.
6. Serve hot.
