Ingredients :-
2 small cabbage head or one big one
-Core cabbage from top part.
-Cook whole head of cabbage in boiling water for a few minutes. -----Make sure to cover the lid while cooking.
-After cooking , the cabbage leaves will come off easily.
-Take out the soft leaves and keep aside to cool down.
-Cut the thick stem part of the leaves.
For the filling:-
1 pound ground beef
2 cup rice washed and rinsed
1 cup fresh chopped dill
½ cup parsley(optional)
1 cup chopped onion
2 Tbsp. chopped garlic
1 tsp black pepper
2 tsp salt or to taste
1/4 tsp hot red pepper or to taste
1/4 -1/2 cup oil
Mix all the filling ingredients together very well and sit aside.
Tomato sauce
2 cans of tomato sauce (each 8 oz).
3 cups of water
1/4 tsp black pepper
1/2-1 tsp salt or to taste
Pinch of hot red pepper
2-4 Tbsp oil
2 Tbsp lemon juice or 1/8 tsp citric acid
Mix all the ingredients and sit aside.
Steps:-
1-Put 2 Tbsp of the filling in each leave and roll up. Starting from the wide side and ending up toward the stem side of the leave.
2-Arrange the cabbage rolls in a big baking dish. Make sure the seam side is down.
3-Cover tightly and bake at the pre heated oven at the 350 F for about 1 ½ to 2 hours.
4-Enjoy as is or with yogurt mixed with dry or fresh mint or dill.
Note:- You can cook the cabbage rolls in a regular pot on top of the stove. After the water comes to boil lower the heat to low-medium and cook for 1 ½ hour.
