This cake is so delicious on its own (maybe with a bit of ice cream) and a cup of tea. Also, it could be horizontally cut into 2-3 cake bases and filled with any filling to create cake layers for occasional cake. This cake really comes perfectly cooked, ‘’spongy’’ and bursting with sweet and addictive vanilla flavour. INGREDIENTS: • 180 g Plain flour • 180 g Caster sugar • 7 Eggs: separate egg whites and egg yolks • 60 g Whole milk • 100 g Melted butter • 1 Tsp Vanilla essence • 2 Tsp Baking powder • 1 Tsp Salt PROCESS: 1. Prepare and measure your ingredients 2. Separate egg whites from egg yolks 3. Grease baking tin with butter and flour 4. In a bowl add egg yolks, vanilla, baking powder, milk, melted butter, salt and mix well, half portion of sugar 5. In a separate bowl whizz egg whites, gradually adding sugar. It has to be thick creamy consistency and increase 4 times in size 6. Gradually add flour into egg whites, mix gently and carefully 7. Then combine egg yolk mix into the egg white mix, fold gently 8. Add batter into the baking tin, tap a few times on the kitchen surface, make a swirl with your spatula (to remove all air bubbles from batter) 9. Put into pre-heated oven, 170 degrees and bake for 35 minutes. Check with a toothpick if it comes out clear 10.
