I present to you the indulgent & exquisite Chocolate & Peanut Butter Lava Cake! Lava cakes seem intimidating to make but follow this recipe and it will be a success every single time. This recipe is incredibly easy and quick. You can make the dessert and eat it in a span of 20 minutes. In case you have a sudden party to host and forgot about the dessert, don’t worry, these lava cakes will come to your rescue & will definitely WOW your guests :) As promised, here is the recipe : Recipe: ¾ cup (or 145g) Dark Chocolate 5 tbsp (or 100g) Unsalted Butter 2 Eggs + 2 Egg Yolks (medium sized eggs) 1/3 cup (or 65g) Brown Sugar ½ tsp Salt 1 tsp Vanilla 2 tbsp (or 25g) All Purpose Flour Instructions: • Before making the batter, let’s do some prep. • Preheat oven to 220˚C • Grease the inside of your ramekins/ silicone moulds with butter and lightly dust with cocoa powder. • In a bowl, melt dark chocolate and butter slowly either over a bain marie or in the microwave at 15-second intervals, stirring after each interval until fully melted. • In a bowl, using a hand whisk, mix the eggs, sugar, salt and vanilla for 2 minutes until light and frothy. • Pour the melted chocolate & mix until well combined. • Add the flour and fold until everything is well incorporated. • Place a scoop of batter into each ramekin, then follow with 1 tbsp of the frozen peanut butter round in the center. Follow that with another scoop of the chocolate mixture to cover the peanut butter. (Pour the batter only until it fills 3/4th of the mould.) • Bake at 220˚C for 10 minutes, or until sides are firm. (Depending on your oven and the size of ramekins you’re using, the baking time will differ so always test one ramekin first and then adjust the baking time for the rest of the ramekins accordingly) • Remove from oven, cool for one minute and overturn onto serving plate. • Top with your choice of ice cream & it’s ready to be served. (I served mine with a drizzle of chocolate, salted caramel & caramel ice cream.) ENJOY!
