This vegan lentil stew is a crowd pleaser! It is my favorite dish to serve for breakfast and brunch gatherings. It tastes even better the next day, so I always make a batch the night before a party and just reheat it before serving. It also freezes very well, so it is perfect for busy families.
Ingredients:
1 red onion
1 yellow onion
1/2 green pepper
1/4 red pepper
3 cups chopped tomatoes
1/2 cup minced garlic
1/4 cup olive oil
2.5 cups uncooked red lentils
2 cups chopped cilantro
1/2 cup chopped green onions
1 cup chopped parsley
1 minced jalapeno (optional)
salt and pepper to taste
1.5 tsp cumin
1.5 tsp coriander
red pepper flakes (optional)
