Easy Homemade Meatloaf w/ Spicy Ketchup
Ingredients/Cost:
Meatloaf
1 lb ground beef: $7.00 @butcherboymarket
1/2 onion: $1.20
1 egg: $0.25
1 slice bread: $0.10
1/4 cup Parmesan: $0.75
1 tsp onion salt: $0.25 @traderjoes
1 tbsp oil: $0.05
Spicy Ketchup
4 tbsp ketchup: $0.25
1 tbsp soy sauce: $0.05
1 tsp maple syrup: $0.05
1 tsp gochujang paste: $0.05
1 tsp ginger powder: $0.05
1 tsp garlic powder: $0.05
Total cost = $10.10 or $5.05 per serving

1. Preheat oven to 350F. Small dice the onion and place in a small pan over medium heat with the oil. Cook, stirring and adding water as needed, until the onions have softened, ~10 minutes.
2. While the onions cook, cut the bread into small pieces. In a bowl, combine the ground beef, egg, bread, Parmesan, and onion salt (if you don’t have this you can just use some salt & onion powder). Add in the softened onions and mix to combine all ingredients.
3. Place some parchment paper inside of a bread loaf pan, then place the beef mixture in and gently press down to form a loaf. Bake for ~30 minutes, then glaze with the spicy ketchup (see step 4), then bake for another ~20 minutes or until fully cooked (internal temp ~160F after resting for 5-10 minutes).
4. To make the spicy ketchup, in a small pan combine the ketchup, soy sauce, maple syrup, gochujang paste, ginger powder and garlic powder. Whisk together and place on the stove over medium-low heat until it come to a simmer. Simmer for 2-3 minutes and then turn off the heat.
