Paal Kozhukatai recipe is a very tasty and easy traditional sweet snack which is often enjoyed during festivals. For this Paal Kozhukatai we can use coconut milk and add cow milk for good taste. To prepare the recipe for 4 members quantity as below, Add in a bowl, 1 cup raw rice flour, ¼ cup of grated coconut, Sugar -1 tablespoon, Salt – 1 Pinch and mix all. Save 1 tablespoon of this mixture in a cup to get added later to get thicken the recipe. Take 1 cup of boiling hot water, slowly add to the above mixture and mix well uniformly with a spoon. Once the mixture cools down slightly, start prepare small balls out of it. Now our Kozhukatai balls are ready. Now to make Paal Kozhukatai, take 1 cup of cow milk and 2 cups of light (2nd squeeze) coconut milk. Start boil both the milk and once it becomes to a boiling stage, reduce the flame to medium and start to add the balls one by one inside. Allow to cook for 15 minutes. After 15mins add the saved 1 tablespoon of rice flour mixture to slightly semi thicken the recipe. Raise the flame for 5 minutes mix it gently to get good balls. Now add Elachi powder and 1 cup of thick (1st Squeeze) coconut milk and turn off the flame. After 5 minutes, now add 1 cup of jaggery syrup (prepared 1 hour before) and stir well. (You can also adjust according to your sweet preference by sugar). Tasty Paal kozhukatai is ready to serve in hot or cold in a bowl with spoon….
