Brain Masala, also known as Maghaz Fry, is a popular South Asian dish made from the brain of animals like lamb, goat, or even cow. It's a delicacy enjoyed by many, especially in Pakistan, India, and Bangladesh. The dish is known for its rich and spicy flavor, and it's often served as a snack or appetizer. Here's a basic recipe description for making Brain Masala: Ingredients: 2 lamb or goat brains, cleaned and soaked in water 1 medium-sized onion, finely chopped 2-3 tomatoes, finely chopped 2-3 green chilies, finely chopped (adjust to your spice preference) 1 tablespoon ginger-garlic paste 1/2 teaspoon turmeric powder 1 teaspoon red chili powder (adjust to your spice preference) 1 teaspoon cumin powder 1 teaspoon coriander powder 1/2 teaspoon garam masala powder Salt, to taste Oil or ghee, for frying Fresh coriander leaves, chopped, for garnish Lemon wedges, for serving Instructions: Clean and Prepare the Brain: Carefully remove any membranes or blood vessels from the brains. Soak the brains in water for about 30 minutes to remove any impurities. Change the water a few times during soaking. Parboil the Brain: In a pot of boiling water, add a pinch of salt and the soaked brains. Boil the brains for about 5-7 minutes. This helps to firm up the texture and remove any residual blood. Cut and Fry the Brain: Once parboiled, carefully cut the brains into bite-sized pieces. Heat oil or ghee in a pan over medium heat. Fry the brain pieces until they turn golden brown on all sides. Remove and set aside. Prepare the Masala: In the same pan, add a bit more oil if needed. Add the chopped onions and sauté until they turn translucent.
