Head of cauliflower, cleaner and cut into chunks 2 T cornstarch 1/4 t baking powder 1/4 t baking soda 1/2 t garlic powder 1/2 t onion powder 1/4 t tumeric 1 t salt 3/4 c chickpea flour 3/4 c water 1. Set deep-fryer to 335 F 2. Whisk dry ingredients. 3. Add water and whisk thoroughly. Batter will be slightly thicker than pancake batter. 4. Add 5-6 cauli chunks coating thoroughly. 5. Add 5-6 chunks to the deep fryer basket, but shake excess batter off before adding. 6. Deep-fry 2-3 minutes then turn out onto a paper towel or wire rack. 7. Work in batches completing steps 4-6 until all cauli chunks are fried. 8. Toss in a bowl with buffalo sauce or plate without sauce and use a squeeze bottle to drizzle sauce over. 9. Garnish with celery and carrot batons and blue cheese dressing (see my previous video for low carb blue cheese dressing). 10. Enjoy!
