Easy Vegan Tapenade

Tapenade is a Mediterranean favourite and very easy to make. This is my veganised version which is cheap, easy and delicious. Lovely on crackers, bread, toast, stirred into pasta dishes, and it makes a handy vegan pesto replacement too. Ingredients: 160g pitted black or green olives (drained if you're getting them from a jar) 4-5 sundried tomatoes (again I buy these in a jar of oil) 5-6 capers (optional) 1/2 dried oregano 1/2 tsp garlic powder or 1 clove of fresh garlic, crushed. Juice of half a lemon 4 tablespoons olive oil (or you could use the lovely infused oil from the sundried tomato jar like I did!) A few grinds of black pepper Equipment: One small food processor or mini chopper. Note: you can get all of these ingredients from your local Lidl, so this is very much a budget option!
