Potals addressed as Pointed gourd in english, Parval in hindi, Potals/protons in south India, this vegetable is a must eat. It is very popular in North India. Potals/Parval lives up to that taste with its crunchy exterior and a full interior.
Different variety of dishes can be prepared using this Potals/parval,a stir fry, or a curried style or a tamatar version, or stuffed fry. Today I'm going to show you the preparation of stuffed potals/Parval fry
Ingredients
Potals/parval/ Pointed gourd – 10
Onion - 2medium size
Green chilli - 2
Crushed groundnuts - 1/2 cup
Cumin (Jeera) - 1Tspn
Tomato - 1 no
Oil- 1Tbsn
Salt- as per the taste
Chilli powder - 1Tspn
Coriander powder - 1Tspn
Curry leaves - few
Garlic - 3 cloves (chopped)
Turmeric powder - 1/2 Tspn
Potals seeds
Directions: clean the potals and peel the skin and make a hole from one side of the potal and scoop out the seeds.
Take a Pan, add oil let it heat then add cumin (jeera), chopped garlic, curry leaves, chopped green chilli mix well.
Now add chopped onions, potal seeds,salt and turmeric powder, mix it and cook for 3-5 minutes, add tomato's and turmeric powder mix well and cook for 2mints, finally add coriander powder, crushed ground nuts finally cook for another mint and turn off the stove. Stuff this mix into potals.
Take a pan add oil, add stuffed potals cover with lid and cook in low flame still these potals gets cooked well.
Serve these with rice or chapathi.
